Breakfast With Veggies : Creamy Scrambled Eggs With Mushroom & Broccoli


Here I come again with one of my recent favorite weekend breakfast. I love this dish and get really excited every time I make it.  Something about the colour theme I guess (Green an Off white), makes me feel healthy and fresh. Happy Cooking J J !!

Ingredients - Serves 2
·         250 grams mushroom
·         250  grams broccoli
·         Bread Slices (3-4)
·         Butter (salted) & Olive Oil
·         Cream Cheese (3 Spoonful )
·         Dry Herbs (Oregano/Chili Flakes)
·         Salt & Pepper
·         Ripe Banana





Step 1. Sauté diced mushroom and Broccoli in butter on low flame for 5 minutess. Once the mushrooms are brown and crispy pop them in microwave for another minute (this is just an additional step based on how cooked you want your broccoli). Sprinkle some oregano an this is ready to serve (I am not adding any salt to veggies as this will help neutralize the taste of the creamy scrambled egg)

Step 2.In  Parallel take 4 eggs (2 full egg + 2 Egg whites only) in a mixing bowl. Do not stir the mixture.

Step 3:  Take two spoons of olive oil in a pan and preheat it on low flame for 2-3 mins. Add the eggs and cream cheese. Sprinkle some salt, pepper, chili flakes and keep whisking the mixture on the pan to get the perfect scrambled egg. (You can make it richer by adding more cheese)

Step 4: Serve half potion of each sautéed veggies and scrambled eggs, with a bread toast and some slices of ripe Banana on the side. Banana will add that missing tart sweetness in this dish required for perfect start of the day.
