Spicy Pasta Penne With Cream Spinach Sauce


This not so conventional Pasta recipe, can be savored by most for the mix of delicious ingredients. The best thing while preparing this dish was that that I did not had worry about the pasta sauce (red/white) as I could enjoy the spicy tomato pasta and creamy sauce in the same dish. For all those who  are all about blending different flavors and are not afraid to experiment , this would be worth a try.



Pasta
Ingredients – Serves 2
·         Pasta penne – (1 cup )
·         Tomatoes  -5 Large tomatoes ( diced)
·         Fresh basil
·         Sun Dried Tomatoes (Optional)
·         Garlic (2 cloves – finely  diced)
·         Chili Flakes
·         Olive Oil

Step 1: In a pan add ten cups of water and put it on the stove. When the water reaches 30 degrees add pasta and stir well. Add to spoons of olive oil and a pinch of salt. (It will take approximately ten to 15 mins for the pasta to cook). Once cooked strain the water.

Step2 : Take a pan and pop it on the stove.Add Olive Oil and pre –heat  for 2-3 minutes.

Step 3 : Add Tomatoes ,Garlic cloves and stir well. Add tomato puree or sauce of choice and cover the pan with a lid and let the tomatoes cook for 7-8 minutes.

Step 4. Once cooked add fresh basil leave and sun dried tomatoes. Add some more olive oil and the chili flakes .Let it cook for another 2-3 min

Step 5 : Add the boiled pasta and stir for a minute

Step 6 : Serve it hot with the creamy mushroom and onion sauce , You can also add some sautéed mushrooms and beans on the side to make  it more healthier .


Creamy Spinach and Onion  Sauce
Ingredients
·         Onions -1 Large onion (sliced in thing long strips)
·         Spinach(Core Ingredient – Handful of fresh whole baby spinach leaves )
·         Cream Cheese ½ cup
·         Ground Pepper/Butter
Step 1: Take a pan and pop it on the stove .Add butter and Onions  and stir for 4-5 minutes.

Step 2: When the Onions are mildly caramelized, add Spinach leaves and stir again .Cover the pan with a lid and let it cook for  five minutes on low flame.


Step 3: Add cheese into the veggie mix well , sprinkle some ground pepper, salt and oregano .Turn of the flame as it is ready to serve
