Tiny Wheat Bread Bruschetta with Cheesy Mushroom & Broccoli Topping




Ingredients- Bread
·        Wheat 1/ ½ Cup Wheat flour
·        ¾ cup All Purpose flour (Maida)
·        Water ½ Cup
·        Yeast ½ tablespoon   
·        Sugar ½ tbs
·        Salt (As per taste)
·        Dried herbs (Oregano, Basil)
·        Baking powder ½ tablespoon
·        2 tbs of olive oil
·        Assorted seed – Flaxseed, Sunflower seeds, Melon seeds (optional)
·        Butter - 30 grams (optional)
 Ingredients- Topping
·        Mushrooms
·        Broccoli Florets
·        10 cloves of garlic
·        Cheese (Optional)
·        Olive Oil/Butter
·        Dried Herbs
·        Chilli Flakes
·        Pepper
·        Rock Salt
·        Green chillies (optional)

Bread- Recipe
·        Warm the water and add yeast and sugar to it. Let it rest for 5 mins, to activate yeast
·        In a separate bowl mix wheat, all-purpose flour, seed, baking soda, salt and herbs
·        Add the mixed flour to the water after 5 mins. Add mixture slowly until a moist/sticky dough is formed. Add olive oil and knead it.
·        After kneading the dough, cover it with a cloth or cling film and let it rise for 30 mins.
·        After 30 min, again knead the dough with low pressure and let it rest for another 30 -40 mins
·        After 40 minutes, make small buns and sprinkle the seeds on the top layer
Baking the Bread
·        Pre-Heat oven to 200 Degrees
·        Oil the baking tray with olive oil
·        Bake bread for 20 -25 minutes
·        Take the bread out and let it cool in room temperature

Making the bruschetta
·        Chop broccoli florets in small pieces
·        Boil water and add broccoli to it. Let it boil for 3-5 mins
·        Strain the water and separate out the broccoli (do not overcook broccoli, it should be bright green and crunchy)
·        Add oil to a wide pan and add mushrooms to it. (wide pan is better when cooking mushrooms, as the water is dried of quickly)
·        Once mushrooms are nicely done, then add broccoli to the pan.
·        Sprinkle herbs, pepper and chilli flakes
·        Add salt to taste. (Note: Mushroom and broccoli has an innate salty flavour to them, so add salt with a lot of caution)
·        Cook for couple of minutes on low flame and then turn off the stove
·        Add grated cheese on top if required

Making the bruschetta
·        Cut the bread in small pieces and toast them in oven/pan
·        Warm butter and add finely chopped garlic ad green chillies to the butter
·        Once a bread is toasted on one side turn it over and glaze butter on it
 Once bread is toasted, add the topping
